This is a classic Canadian dessert, also known as Poor Man's Pudding. It features a simple cake batter baked underneath a rich, sweet maple syrup sauce.
Preheat your oven to 325°F (160°C).2. Grease a 13 inch by 9 inch baking pan.3. In a large bowl, use an electric mixer to beat the butter and sugar together until the mixture is light and fluffy.4. Add the eggs and vanilla extract to the butter mixture. Mix well until everything is combined.5. In a separate, medium bowl, mix the flour and baking powder together.6. Add the flour mixture and milk alternately to the butter mixture. Start and end with the flour mixture. Mix until just combined and smooth. Do not overmix.7. Pour the cake batter evenly into the prepared 13 inch by 9 inch baking pan.8. To make the maple sauce, combine the maple syrup, brown sugar, single cream, and the remaining butter in a large saucepan or casserole dish.9. Place the saucepan over medium-high heat. Bring the mixture to a boil, stirring constantly to prevent burning.10. Once boiling, reduce the heat to low. Gently cook the sauce for 2 minutes, stirring occasionally, until it has slightly thickened.11. Carefully pour the hot maple sauce evenly over the cake batter in the pan. Do not mix it in.12. Bake the pudding in the preheated oven for approximately 35 minutes.13. The pudding is done when the top is light brown and a toothpick inserted into the cake part comes out clean.
