Instructions
- Crush the garlic cloves into a fine paste
- Add lemon juice and the garlic to a small jar, mix well
- Add olive oil to the jar and shake vigorously. The garlic will allow the lemon juice to emulsify with the oil resulting in a ever so slightly thick dressing where the oil doesn't immediately separate.
- Add salt and pepper to taste
Store in the fridge, will be good for at least a few days to weeks. It will separate again over time and require shaking again to reincorporate.
