This acidic dressing is often used in a cabbage salad. Where the lemon softens the raw thinly sliced cabbage. It also works well with fish and other seafood

Serves:

Ingredients

  • 3 - Garlic cloves (crushed into a fine paste)
  • 20 millileters - Lemon juice
  • 30 millileters - Olive oil
  • salt and pepper (to taste)

Instructions

  • Crush the garlic cloves into a fine paste
  • Add lemon juice and the garlic to a small jar, mix well
  • Add olive oil to the jar and shake vigorously. The garlic will allow the lemon juice to emulsify with the oil resulting in a ever so slightly thick dressing where the oil doesn't immediately separate.
  • Add salt and pepper to taste

Store in the fridge, will be good for at least a few days to weeks. It will separate again over time and require shaking again to reincorporate.
