  • 2.25 cups - French Lentils (cups)

  • 2 sticks - Celery (null)

Instructions

  1. Place a large saucepan on the stove. Turn the heat to medium. Add 3 tablespoons of Olive Oil to the saucepan.2. Wait for the oil to become hot. The oil may shimmer slightly when ready.3. Add the chopped Onion, 2 cloves of Garlic, 1 Carrot, and 2 Celery sticks to the hot oil.4. Cook these vegetables, stirring often, for 5 to 10 minutes. They should become soft.5. For a richer flavor, you may replace some or all of the 6 cups of water with an equal amount of chicken stock.6. Add 6 cups of water (or chicken stock) to the saucepan.7. Add 2.25 cups of French Lentils, 1 teaspoon of Thyme, 3 Bay Leaves, and 1 tablespoon of Salt.8. Increase the heat to high. Bring the mixture to a full, rolling boil.9. Once boiling, reduce the heat to maintain a fast simmer. Small, lively bubbles should continue to break the surface.10. Let the lentils simmer uncovered for 20 to 25 minutes.11. The lentils should become tender. Most of the water should be absorbed by the lentils during this time.12. After 20-25 minutes, taste a lentil to check for tenderness.13. If there is still a lot of excess water remaining in the saucepan, carefully drain it away.14. Serve the French Lentils immediately while hot.15. You can also let the cooked lentils cool down completely and reheat them later.
