STEP 1 - MARINATE THE BEEF. In a bowl, combine 0.5 lb Beef, 0.5 teaspoon Salt, 1 teaspoon Sesame Seed Oil, 1 pinch Pepper, 1 Egg White, 2 tablespoons Starch, and 1 tablespoon Oil. Mix all ingredients thoroughly with the beef. Set the marinated beef aside. STEP 2 - COOK THE BEEF. Heat a large pan or wok over medium-high heat. Add 2 tablespoons of Oil to the pan. Once the oil is hot, add the marinated beef. Cook the beef until it is golden brown on all sides. This should take about 3-5 minutes. Remove the cooked beef from the pan and set it aside on a plate. STEP 3 - STIR-FRY AROMATICS AND VEGETABLES. Add 1 tablespoon of Oil to the same pan or wok. Add 1 teaspoon minced Ginger and 1 teaspoon minced Garlic. Stir-fry for about 30 seconds until fragrant. Add 0.75 cup Onion, 0.5 cup Carrots, 0.75 cup Green Pepper, 1 cup Celery, and 1 cup Mushrooms to the pan. Stir-fry the vegetables for 2-3 minutes until they start to soften. Add 1 tablespoon Cooking wine and 1 cup Water to the pan. Bring the mixture to a simmer. STEP 4 - MAKE THE SAUCE. In a small bowl, combine 1 tablespoon Oyster Sauce, 0.5 teaspoon Hotsauce, and 1 teaspoon Sugar. Mix these ingredients well to create the sauce. Pour the prepared sauce into the pan with the vegetables. Stir to combine. Add the previously cooked beef back into the pan. Add 1 tablespoon Soy Sauce. Stir everything together. STEP 5 - THICKEN THE SAUCE. In a separate small bowl, whisk together 1 tablespoon Starch and 2 tablespoons Water until smooth. This is your cornstarch slurry. Slowly pour the cornstarch slurry into the stir-fry while stirring constantly. Continue stirring until the sauce thickens to your desired consistency. Serve immediately.
