Place the chicken breast between two sheets of plastic wrap. Gently pound the chicken with the flat side of a meat tenderizer until it is about 0.5 inches thick. Cut the pounded chicken breast into two pieces, ensuring they are as even as possible. Place the chicken pieces into the pickle juice. Let the chicken marinate for 30 to 60 minutes. (Optional: Add 1 teaspoon of Tabasco sauce for a spicy sandwich). In a bowl, whisk the egg and milk together. In a separate bowl, combine the flour, icing sugar, paprika, salt, black pepper, garlic powder, celery salt, and cayenne pepper. Take one piece of chicken. Dip it into the egg and milk mixture, coating both sides thoroughly. Then, coat both sides of the chicken piece thoroughly with the flour mixture. Repeat this breading process for the second chicken piece. Pour the olive oil into a skillet, ensuring the oil is about 0.5 inches deep. Heat the oil to a temperature between 345 and 350 degrees Fahrenheit. Carefully place one breaded chicken piece into the hot oil. Fry for 2 minutes on one side until golden. Flip the chicken piece. Fry for another 2 minutes on the second side. Continue cooking until the chicken is golden brown and fully cooked through. Repeat this frying process for the second chicken piece. Remove the cooked chicken from the skillet. Place it on a plate lined with paper towels to absorb any excess oil. Serve immediately on toasted sesame seed burger buns. Add pickle slices if desired.
