Heat 3 tablespoons of unsalted butter in a large skillet. Use medium heat. A cast iron skillet works well. 2. Add 1 medium chopped onion to the skillet. Cook the onion for a few minutes until it becomes soft and clear (translucent). 3. Add 3 cups of chopped corned beef and 3 chopped potatoes to the skillet with the onion. 4. Mix all ingredients together. Spread the mixture evenly across the bottom of the pan. 5. Increase the heat to high or medium-high. 6. Press down firmly on the mixture using a metal spatula. This helps the ingredients to brown. 7. Do not stir the mixture. Let it cook undisturbed to allow browning. You should hear a sizzling sound. 8. After a few minutes, carefully lift a section with your metal spatula to check for browning underneath. 9. If the bottom is nicely browned, use the spatula to flip sections of the mixture over. This exposes the uncooked side to the hot pan. 10. Press down on the flipped sections again with the spatula. 11. If the mixture starts to stick too much, add a little more unsalted butter to the pan. 12. Continue to cook, flipping and pressing, until the potatoes and corned beef are browned to your liking. 13. Remove the skillet from the heat. 14. Stir in the freshly chopped parsley. 15. Season with plenty of freshly ground black pepper. Add Kosher salt to your taste.
