Eton Mess is a traditional British dessert. It is a delightful combination of whipped cream, fresh strawberries, and crushed meringue. This light and fruity treat is perfect for any occasion.
Take half of the 500g of strawberries. Place these strawberries into a blender. Blend them until smooth to create a strawberry purée. Set this purée aside.2. Take the other half of the strawberries. Chop these remaining strawberries into small pieces. Reserve four whole strawberries to use for decoration later.3. In a large bowl, pour the 400ml of double cream. Using an electric mixer or whisk, whip the cream until it forms stiff peaks. Stiff peaks mean the cream holds its shape when you lift the whisk from it.4. Gently fold the strawberry purée you made earlier into the whipped cream.5. Gently crush the 3 meringue nests into small pieces. Fold the crushed meringue into the cream and purée mixture.6. Add the chopped strawberries (not the reserved whole ones) to the mixture.7. If you are using it, add the 1 tablespoon of ginger cordial. Gently fold these ingredients into the mixture until they are just combined.8. Take four cold wine glasses. Spoon an equal amount of the Eton Mess mixture into each of the four glasses.9. Place one of the reserved whole strawberries on top of the mixture in each glass. Garnish each serving with a sprig of fresh mint.10. Serve immediately.
