  • 2 tablespoons - Olive Oil (tbs)
  • 1 sliced - Onion (null)

  • 3 cups - Fish Stock (cups)
  • 3 cups - Water (cups)
  • 4 larges - Potatoes (null)
  • 3 nulls - Bay Leaf (null)
  • 1 null - Cod (null)
  • 1 null - Salmon (null)

Instructions

  1. Set a medium pot on your stove. Add 2 tablespoons of olive oil to the pot. Heat the oil over medium-high heat. 2. Add the 1 sliced onion to the hot oil. Cook the onion, stirring occasionally, until it starts to turn golden and soft. This should take about 5 to 7 minutes. 3. Add the 2 medium carrots to the pot. Continue to cook for about 4 more minutes, stirring, until the carrots begin to soften. 4. Pour in 3 cups of fish stock and 3 cups of water. Add the 4 large potatoes and 3 bay leaves. Add salt to your taste preference. 5. Bring the liquid to a rolling boil. Then, reduce the heat to a low setting. Cover the pot with a lid. Cook for 10 minutes. 6. Gently add the pieces of 1 cod and 1 salmon to the soup. Stir them in carefully. 7. Bring the soup back to a gentle simmer. Cook for about 5 to 7 minutes. The fish is cooked when its flesh turns opaque and flakes easily with a fork. Be careful not to overcook the fish. 8. Remove the bay leaves from the soup before serving. 9. Serve the soup hot. You may garnish with fresh chopped dill or parsley, if desired.
