This is a traditional Egyptian stew featuring Mulukhiyah, a leafy green vegetable, cooked with beef.

  • 800 g - Mulukhiyah (null)
  • 1 chopped - Onion (null)
  • 300 g - Beef (null)
  • 1 teaspoon - Salt (tsp)
  • 1 l - Water (Litre)
  • 1 null - Garlic Clove (null)
  • 0.5 cup - Olive Oil (null)

Instructions

  1. Heat 3-4 tablespoons of olive oil in a large pot over medium heat. Add the 1 chopped onion. Cook the onion until it is soft, about 5-7 minutes. 2. Add the 300g of beef to the pot with the onions. Sear the beef for 3-4 minutes on each side until browned. 3. Pour 1 liter of water into the pot. Ensure the water covers the meat. 4. Bring the water to a boil, then reduce the heat to medium. Cook the beef until it is tender. This can take 1-2 hours in a pot, or about 5 minutes in a pressure cooker. 5. Add the 800g of frozen Mulukhiyah to the pot with the beef and broth. Stir continuously until the Mulukhiyah thaws completely and the stew begins to boil. 6. In a separate small pan, heat 1/4 to 1/2 cup of olive oil over medium-low heat. Add the 1 clove of garlic. Cook the garlic until you can smell it, about 1-2 minutes. Be careful not to let the garlic brown, as it will become bitter. 7. Carefully pour the cooked garlic and olive oil from the small pan into the Mulukhiyah stew. Stir to combine. 8. Reduce the heat to low and let the Mulukhiyah simmer for 5-10 minutes. 9. Add 1 teaspoon of salt to the stew. Taste and add more salt if needed. 10. Serve the Mulukhiyah hot with a generous amount of fresh lemon juice. 11. You can serve this dish with short grain rice or pita bread.
