Step 1: Prepare the chicken. Use a sharp knife to make three shallow cuts (slashes) on each chicken drumstick. Step 2: Make the marinade. In a medium bowl, combine the soy sauce, honey, olive oil, tomato purée, and Dijon mustard. Stir these ingredients together until well mixed. Step 3: Marinate the chicken. Place the prepared chicken drumsticks into the bowl with the marinade. Ensure that all drumsticks are thoroughly coated with the marinade. Step 4: Allow to marinate. You have two options for marinating. Option A: Let the chicken marinate at room temperature for 30 minutes. Option B: For a richer flavor, cover the bowl and refrigerate the chicken to marinate overnight. Step 5: Preheat the oven. Preheat your oven to 200°C. If using a fan oven, set it to 180°C. If using a gas oven, set it to Gas Mark 6. Step 6: Roast the chicken. Transfer the marinated chicken drumsticks and all the marinade into a shallow roasting tray. Arrange the drumsticks in a single layer. Step 7: Cook. Place the roasting tray in the preheated oven. Cook the chicken for 35 minutes. During cooking, turn the chicken drumsticks occasionally. This ensures even cooking and helps the marinade create a sticky glaze. The chicken is ready when it is tender and glistening with the marinade.
