  • 4 nulls - Egg Plants (null)
  • 2 nulls - Eggs (null)
  • 1 teaspoon - Salt (tsp)
  • 4 teaspoons - Olive Oil (tsp)

Instructions

  1. Grill the eggplants. Grill them until their skin is almost black. 2. Let the grilled eggplants cool down for a while. 3. Carefully peel off the skin from each eggplant. Set the peeled eggplants aside. 4. Crack the eggs into a bowl. 5. Add 1 teaspoon of salt to the eggs. 6. Beat the eggs and salt together until well mixed. 7. Place each peeled eggplant on a flat surface. 8. Use a fork to gently flatten each eggplant. 9. Take one flattened eggplant. Dip it completely into the beaten egg mixture. Make sure it is fully coated. 10. Heat a frying pan over medium heat. 11. Add 4 teaspoons of olive oil to the hot pan. 12. Place a coated eggplant into the hot oil. 13. Fry the eggplant for 3 to 4 minutes on one side. 14. Flip the eggplant. Fry the other side for another 3 to 4 minutes. 15. Ensure both sides are cooked and lightly golden. 16. Repeat with the remaining eggplants.
