  • 1.5 tablespoons minced garlics - Garlic (null)
  • 0.25 cup - Sugar (¼ cup)
  • 1 tablespoon - Fish Sauce (null)
  • 0.5 tablespoon - Soy sauce (½ tablespoon thick)
  • 0.5 tablespoon - Pepper (½ tablespoon)
  • 3 tablespoons - Olive Oil (tablespoons)
  • 1 null - Cucumber (Sliced)
  • 1 null - Mint (Leaves)
  • 1 null - Peanuts (Crushed)

Instructions

  1. Slice the uncooked pork thinly. Aim for slices about ⅛ inch (3mm) thick. Freezing the pork slightly for 15-20 minutes can make this step easier.

  2. Mince the shallots and garlic very finely.

  3. In a medium bowl, combine the minced shallots, minced garlic, sugar, fish sauce, thick soy sauce, pepper, and olive oil. Stir this mixture well until all the sugar has completely dissolved. This is your marinade.

  4. Add the sliced pork to the marinade in the bowl. Mix thoroughly to ensure every piece of pork is fully coated.

  5. Marinate the pork for at least 1 hour at room temperature. For the best flavor, cover the bowl and marinate the pork overnight in the refrigerator (8-12 hours).

  6. Preheat your oven to 375°F (190°C).

  7. Arrange the marinated pork slices in a single layer on a baking sheet. Do not overlap the pieces.

  8. Bake the pork for 10 to 15 minutes. The pork should be mostly cooked through.

  9. Carefully remove the baking sheet from the oven. Change your oven setting to broil.

  10. Place the baking sheet back into the oven under the broiler. Broil the pork until it turns a nice golden brown color, about 2-4 minutes per side. Watch the pork closely during this step to prevent burning. Flip the pork pieces halfway through to ensure even browning on both sides.

  11. While the pork is cooking, prepare your rice vermicelli noodles according to the specific instructions on their package. Drain well and set aside.

  12. To assemble each serving bowl, first place a portion of the cooked rice vermicelli noodles at the bottom.

  13. Next, add fresh vegetables like sliced cucumber and fresh mint leaves on top of the noodles.

  14. Arrange the hot, grilled pork slices over the vegetables.

  15. Sprinkle crushed peanuts generously over the pork.

  16. Serve immediately with egg rolls and Vietnamese dipping sauce (Nuoc Cham), if you wish. You can mix all ingredients together before eating, or add dipping sauce to each individual bite.
